Im setting up my rak831 gateway sitting on a rpi3, the
“sudo gateway-config” command is asking me to choose a channel-block, im not sure what this means or what to choose. haven’t found much info on this?

The US band support 64 (+ 8) channels, thus 72 in total (see the LoRaWAN Regional Parameters specification). However, most gateways only support 8 + 1 channels. That is why you need to pick a sub-set of the available channels. Usually 0 - 7 or 8 - 15 is selected (the latter also matches with the TTN channel-plan).
You might also need to check what is supported by your devices. Although devices should use all channels for OTAA activation, some of them use a hard-coded set of channels.
